Hi John,
You are swinging now, a clear and well produced video.
Re the split corners of the screws on your vice, I have a small chuck with the same problem, caused by myself using the chuck key,and tapping it to remove the chuck. I now use a length of 1" square bar clamped in the chuck jaws, and tap the end of that.

Enjoyed the video very much doubleboost. Very clear and fun to watch.
I use water for cooling after tempering on water hardening stock since I want to stop the color progression instantly. The temperatures for tempering are quite low compared to hardening so shock cooling isn't usually a problem. I don't think oil tempering hurts anything, though. Just doesn't stop the colors as fast.
Hardening is a different matter, and an oil quench is used for oil hardening stock. Some people also use oil to quench water hardening stock. Going the other way, though risks cracks.
